Peru is a millenary country located in western South America. The country is a multicultural place where many cultures such as the Spanish and Inca culture have consolidated their legacy. A big example of this cultural heritage is the lost city of Machu Picchu and Cuzco as the capital of the Inca Empire. Peru possesses plenty of natural attractions such as the Titicaca Lake, the Colca Canyon, and the Pastoruri snow-capped mountain. Peru is recognized as having one of the most exquisite and traditional cuisines in South America. Like Brazilian recipes and Mexican Cuisine, The Peruvian food has a large number of influences from Chinese, Spanish, African and Japanese cuisine.

In the 16th century, the Spanish Francisco Pizarro conquered the Inca Empire. He found a big amount of gold and silver; however, the conqueror also found many delicious tubers in the area. In fact, Peru cultivates more than 1500 types of potatoes and the main ingredients in the Peruvian cuisine include potatoes, corn and beans. These three main ingredients combine their flavor with other ingredients such as rice, meat, garlic, pork and onions. The interesting combination between tubers, meat and other ingredients create the most delicious dishes in the world.

The cooking recipes of Peru are very varied, colorful, tasty, and mixed thanks to the perfect geographical location. According to Copeland Marks in his book “The Exotic Kitchens of Peru” the country was blessed with the Humboldt Current in the cost because this cold stream water brings a huge variety of fish that is being used in many seafood dishes. In addition, foreigners can find other types and styles of food in the cold high lands and in the exotic jungle.

Even though the Peruvian cuisine is the one of the most delicious in the entire South America area, this cuisine is not recognized as a gourmet cuisine yet.  However, Peruvian food has a large number of followers around the globe.  

The most traditional dishes and deserts of Peru

Here is a list of the most traditional dishes and deserts of Peru:

  • Anticucho. This is one of the most important typical Peruvian dishes that foreigners can find easily in any restaurant of the country. It is a grilled marinated beef heart served with potatoes and special sauces.
  • Mazamorra Morada. The purple corn (maiz morado) is the elemental ingredient in this delicious dessert.
  • Leche Asada. Roasted milk is the most popular dessert in Peru. It is really famous for its flavor and nutritional value.
  • Lomo Saltado.The lomo saltado is a perfect combination of many ingredients such as soy sauce, garlic, onions, vinegar, rice, beef, tomatoes and potato fried chips.
  • Ceviche. Ceviche is the most popular seafood in Peru. Foreigners can find a large number of restaurants offering this special dish during the day, especially in summertime.

Papa a la Huancaina. This tasty dish has a special yellow spicy sauce that covers the sliced potatoes. It is really popular in the Peruvian menus.
