Valencia is one of the autonomous communities located in eastern Spain that borders Cataluna, Aragon, Castilla-La Mancha and Murcia. Like every other community in Spain, its cuisine is very varied and tasty. 

The three Valencian gastronomies

Valencia’s cuisine is basically divided in three: Castellón’s, Alicante’s and Valencia’s Cuisine, each province has their own characteristics. Despite these differences, Valencia is a region where rice is a dominant ingredient, it could be mixed with different stews or just served dry, others basic ingredients could be vegetables, seafood, and meat.

The main influences received for the Valencia Community came from the Balearic cuisine, Catalan cuisine, Aragonese cuisine, Manchego cuisine and Murcian cuisine.

Valencian gastronomy styles

The coastal areas of Valencia and the mountain areas have different styles, the coastal areas use ingredients such as fish, seafood and rice meanwhile the mountain areas use lamb, and kid goat. But the ingredients that are present in most of the stews of both areas are: seafood, vegetables, beef, pork, lamb or other meat, dried meat, beans, bacon and/or sausages.

Popular dishes of Valencia

The most popular dishes of Valencia are: Paella is the most famous Valencian dish made with of white rice, green vegetables, meat (rabbit, chicken, and duck), land snails, beans and seasoning, Escalibada made with grilled vegetables (eggplants, sweet red peppers, red tomatoes and sweet onions), Arròs al forn made with rice, sausages and potato baked in oven.

Popular dishes of Castellón 

The most popular dishes of Castellón are:  Arroz empredrado, made with tomatoes and cod fish covered with white beans, The Castellon Stew, made with white beans, meat and bacon, Arroz mariner, made with rice, shrimp, clams, peas and peppers.

The most popular dishes of Alicante are: Paella alicantina prepared with chicken and rabbit, Fideuà or fideuá is a noodle dish made in a paella pan, contain fish, squid and other seafood and saffron, or squid or cuttlefish ink, which turns the dish jet black, Bajoques Farcides made with rice, pork, tomatoes and spices, la Pericana made with cod fish, olive oil, dried peppers and garlic, Cocido de Pelotas made with chicken or turkey, lean pork and bacon fat, garbanzo beans and spices, served with balls made of egg, pork, blood breadcrumbs and parsley.
